Prepare the Turkey
Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Preheat your oven to 325°F (165°C).

Season the Turkey
In a bowl, mix the softened butter, salt, black pepper, garlic powder, onion powder, thyme, and rosemary until well combined. Carefully loosen the skin on the turkey breast and legs and rub about half of the butter mixture under the skin. Use the remaining mixture to coat the outside of the turkey.

Prepare the Stuffing
In a large skillet, sauté the diced onion, celery, and carrot in a little butter until softened. Add the bread cubes, sage, and chicken broth. Mix well until the bread is moistened. If using, stuff the turkey cavity with the prepared stuffing.

Roast the Turkey
Place the turkey in a roasting pan, breast side up. Pour the broth into the bottom of the pan. Cover the turkey loosely with aluminum foil. Roast in the preheated oven for about 13-15 minutes per pound (about 3-4 hours for a 12-16 lb turkey), basting occasionally with the pan juices. Remove the foil for the last hour of cooking to allow the skin to brown and crisp.

Check for Doneness
Use a meat thermometer to check the internal temperature of the turkey. It should reach 165°F (75°C) in the thickest part of the breast and thigh. Once done, remove from the oven and let it rest for at least 20-30 minutes before carving.
