Prep the Ingredients
Begin by grating the cheddar cheese if not pre-grated. If using, chop the green onions and jalapeños into small pieces.

Heat the Pan
Place a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Allow it to heat for about 1-2 minutes.
Cooking

Assemble the Quesadilla
Take one flour tortilla and sprinkle 1 cup of cheddar cheese evenly over half of the tortilla. If using, add some chopped green onions and jalapeños on top of the cheese.

Cook the Quesadilla
Fold the tortilla over to cover the cheese and create a half-moon shape. Carefully place it in the heated skillet. Cook for about 2-3 minutes or until the bottom is golden brown.

Flip and Finish Cooking
Using a spatula, carefully flip the quesadilla. If needed, add another tablespoon of olive oil to the skillet. Cook for an additional 2-3 minutes until the second side is golden and the cheese is melted.

Repeat
Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the assembly and cooking process for the remaining tortillas and cheese.
Serving

Slice and Serve
Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side.
