Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Scrub the Russet potatoes under running water. Pat them dry with a kitchen towel.

    Bake the Potatoes

    Pierce each potato several times with a fork, then rub them with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes or until tender when pierced with a fork.

Assembling the Skins

    Cool and Cut Potatoes

    Once baked, remove the potatoes from the oven and allow them to cool for about 10 minutes. Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato intact to create a shell.

    Add Cheese and Bacon

    Brush the inside of each potato skin with olive oil. Fill each skin with shredded cheddar cheese and diced bacon.

    Bake Again

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the potato skins from the oven and top with chopped scallions. Serve warm with a generous dollop of sour cream on the side.
