Prepare Caprese Salad
Slice the fresh mozzarella and tomatoes into thick slices. Arrange them on a serving plate by alternating the mozzarella slices with tomato slices.

Add Basil and Season
Tuck fresh basil leaves in between the mozzarella and tomato slices. Drizzle with olive oil and balsamic glaze, then sprinkle with salt and black pepper.

Marinate Chicken
In a bowl, combine minced garlic, lemon juice, chopped rosemary, olive oil, salt, and black pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.

Cook Chicken
Preheat the grill or a skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked and juices run clear.

Make Chocolate Ganache
Chop the dark chocolate and place it in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate and let sit for a minute.

Combine and Chill
Stir the mixture until the chocolate melts and is smooth. Add vanilla extract and mix well. Refrigerate for about 1 hour until set.

Serve with Raspberries
Spoon the ganache into serving dishes and top with fresh raspberries and mint leaves.
