Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

Cheese Sauce Preparation

    Make the Roux

    In a large saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes until the mixture is smooth and golden.

    Add Milk

    Gradually add the milk to the roux, whisking continuously to avoid lumps. Continue to cook and stir until the mixture thickens, about 5-7 minutes.

    Incorporate Cheese

    Reduce heat to low and stir in the shredded cheddar cheese and cream cheese. Mix until the cheeses are completely melted and the sauce is smooth.

    Season the Sauce

    Add salt and black pepper to taste. Stir well to combine the seasonings into the cheese sauce.

Combining and Baking

    Combine Pasta and Sauce

    Add the cooked cavatappi pasta to the cheese sauce. Stir until all the pasta is evenly coated with the sauce.

    Prepare the Topping

    In a small bowl, mix together breadcrumbs, grated Parmesan cheese, and olive oil until well combined.

    Assemble and Bake

    Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Evenly sprinkle the breadcrumb mixture over the top. Bake in the preheated oven for 25-30 minutes or until the topping is golden brown and crispy.
