Method

Preparation of Eggplant

    Slice the Eggplant

    Wash and slice the eggplant into 1/2 inch thick rounds. Sprinkle with salt and let sit for 30 minutes to draw out moisture.

    After 30 minutes, rinse the eggplant slices under cold water to remove excess salt and pat dry with paper towels.

Cooking Sauce

    Saute Garlic

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasoning

    Stir in the crushed tomatoes, Italian seasoning, salt, and pepper. Let simmer for 15 minutes.

Breading and Frying Eggplant

    Prepare Breading Station

    In one bowl, whisk the egg. In another bowl, place the breadcrumbs.

    Dip each eggplant slice first into the egg, then coat with breadcrumbs. Set aside.
