Prepare the crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter and you have a crumbly mixture.

Pre-bake the crust
Preheat your oven to 350°F (175°C) and bake the crust for 8-10 minutes, until lightly golden. Remove from the oven and let cool while you prepare the filling.

Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and mix until combined.

Add remaining ingredients
Add the vanilla extract, sour cream, and eggs, one at a time, mixing well after each addition until the mixture is smooth and no lumps remain.

Pour filling over crust
Pour the cream cheese filling over the cooled crust in the springform pan, spreading it evenly.

Bake in the preheated oven for 50-60 minutes, until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
