Assorted Mini Cheesecakes

Prepare the crust
In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until fully combined.

Form the crust
Press the mixture into the bottom of mini cheesecake pans or muffin tins to form a crust. Bake at 350°F (175°C) for 10 minutes and then cool.

Make the cheesecake filling
In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.

Fill the crusts
Pour the cheesecake filling over the cooled crusts. Fill until nearly full.

Bake the cheesecakes
Bake at 325°F (160°C) for 20-25 minutes until the edges are set. Cool in the pans, then refrigerate for at least 2 hours.

Add toppings
Once chilled, add assorted toppings of your choice before serving.
Tiramisu

Prepare the coffee mixture
In a shallow dish, combine cooled espresso and coffee liqueur (if using). Set aside.

Make the cream mixture
In a large bowl, beat mascarpone cheese, heavy cream, and sugar until smooth and creamy.

Assemble the layers
Dip ladyfingers in the coffee mixture briefly and layer them in a serving dish. Spread half of the cream mixture over the ladyfingers.

Repeat the layers
Add another layer of dipped ladyfingers and top with the remaining cream mixture.

Chill
Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

Before serving, dust the top with cocoa powder.

Preheat the oven
Preheat your oven to 350°F (175°C). Grease or line a baking pan.

Cream the butter and sugars
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the eggs one at a time, followed by the vanilla extract.

In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to the wet mixture.

Gently fold in the chocolate chips until evenly distributed.

Spread the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
