    Cook the Penne Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.

    Prepare the Blistered Tomatoes

    In a large skillet, heat the olive oil over medium-high heat. Add the cherry tomatoes, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the tomatoes blister and burst. Remove from heat and set aside.

Cajun Alfredo Sauce

    Make the Cajun Alfredo Sauce

    In the same skillet used for the tomatoes, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the heavy cream and bring to a simmer. Gradually whisk in the grated Parmesan cheese until smooth. Add Cajun seasoning, salt, and black pepper, stirring to combine. Let the sauce simmer for 3-5 minutes until slightly thickened.

Combine and Serve

    Combine Ingredients

    Add the cooked penne pasta to the skillet with the Cajun Alfredo sauce. Toss to coat the pasta evenly with the sauce. Gently fold in the blistered tomatoes.

    Serve the Cajun Alfredo penne hot, garnished with additional Parmesan cheese and a sprinkle of Cajun seasoning if desired.
