Method

Preparation

  1. 1

    Chop Vegetables

Start by washing and chopping the ripe tomatoes into chunks. Peel and finely chop the onion. Mince the garlic cloves.

  2. 2

    Prepare Basil

Rinse the fresh basil leaves under cold water and pat them dry with a paper towel. Set aside.

Cooking

  1. 3

    Sauté Onions and Garlic

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Then, add the minced garlic and cook for another minute until fragrant.

  2. 4

    Add Tomatoes and Broth

Stir in the chopped tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, until the tomatoes are soft.

  3. 5

    Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the mixture to a regular blender in batches and blend until smooth.

  4. 6

    Add Cream and Seasonings

Once the soup is blended, return it to the pot (if using a regular blender). Stir in the heavy cream, salt, black pepper, and sugar. Let it simmer for an additional 5 minutes to heat through.

  5. 7

    Stir in Basil

Finally, stir in the fresh basil leaves and cook for another minute. Adjust seasoning to taste.

Serving

  1. 8

    Serve the Soup

Ladle the tomato basil cream soup into bowls. Optionally, garnish with additional basil leaves or a drizzle of olive oil. Serve hot.
