    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    In a bowl, combine the ricotta cheese, cooked spinach, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well until all ingredients are well incorporated.

Assembly

    Roll Out the Dough

    After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.
