Cook the Pasta
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and return it to the pot.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat but keep warm.

Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined.

Mix Pasta and Pancetta
Add the hot spaghetti to the skillet with the pancetta. Toss to combine, ensuring the pasta is well coated with the pancetta fat.

Add the Egg Mixture
Quickly pour the egg and cheese mixture over the pasta, tossing rapidly to coat the spaghetti without scrambling the eggs. Add reserved pasta water a little at a time until you achieve a creamy consistency.

Taste and adjust seasoning with more salt and black pepper as needed. Serve immediately with additional Parmesan cheese on the side.
