Preparing the Short Ribs

Season the Short Ribs
In a mixing bowl, combine salt, black pepper, cumin, garlic powder, and onion powder. Rub the seasoning mixture all over the short ribs.

Sear the Ribs
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned short ribs and sear on all sides until browned, about 3-4 minutes per side.

Cook the Ribs Low and Slow
Reduce the heat to low, cover the skillet, and cook for 2-3 hours, or until the ribs are tender and easily pull apart. Alternatively, you can cook them in a slow cooker on low for 6-8 hours.

Assembling and Cooking the Quesadilla

Prepare the Tortilla
Lay one flour tortilla flat on a clean surface. Sprinkle a generous amount of pepper jack cheese over half of the tortilla.

Add Short Ribs and Cilantro
Top the cheese with a portion of shredded short rib meat and a sprinkle of freshly chopped cilantro.

Fold and Cook
Fold the tortilla over to create a half-moon shape. In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet.

Toast the Quesadilla
Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Remove from the skillet and cut into wedges.
