Red Wine Vinaigrette

Method

Preparing the Salad

    Wash the Greens

    Rinse the mixed salad greens thoroughly under cold water to remove any dirt or debris. Use a salad spinner to dry them or pat them gently with a clean kitchen towel.

    Cut the Vegetables

    Halve the cherry tomatoes. Slice the cucumber into thin rounds. Thinly slice the red onion.

    Combine the Ingredients

    In a large salad bowl, combine the washed mixed greens, cherry tomatoes, cucumber slices, and red onion slices.

Making the Red Wine Vinaigrette

    Mix the Ingredients

    In a small bowl or jar, combine the red wine vinegar, extra virgin olive oil, Dijon mustard, honey, salt, and black pepper.

    Whisk or Shake

    Whisk the ingredients together until well combined, or seal the jar and shake vigorously until emulsified.

Final Assembly

    Dress the Salad

    Drizzle the vinaigrette over the salad mixture in the large bowl. Start with half the vinaigrette and add more to taste.

    Toss and Serve

    Gently toss the salad with two large spoons to coat the greens and vegetables evenly with the dressing. Serve immediately.
