Method

Making Fresh Ricotta

    Heat the Milk and Cream

    In a large pot, combine the whole milk and heavy cream. Heat the mixture over medium heat, stirring gently until it reaches a temperature of 190°F (88°C). Do not let it boil.

    Add Vinegar and Salt

    Once the milk and cream mixture is hot, remove it from heat. Stir in the white vinegar and salt. Let the mixture sit for about 10 minutes, allowing the curds to form.

    Strain the Curds

    Place a fine mesh strainer or cheesecloth over a large bowl. Carefully pour the curds and whey into the strainer. Let it drain for about 15-20 minutes, or until the curds reach your desired consistency.

    Transfer and Refrigerate

    Transfer the ricotta to an airtight container and refrigerate until ready to use. It can be stored for up to 3 days.

Preparing Honey Drizzle
