Cooking the Lentils

Rinse and soak the lentils
Rinse the yellow lentils under cold water until the water runs clear. Soak them in enough water for about 30 minutes.

Cook the lentils
In a large pot, combine the soaked lentils and 4 cups of water. Bring to a boil, then reduce the heat to a simmer. Add turmeric powder and salt. Cover and cook for about 20-25 minutes or until the lentils are soft and fully cooked.

Mix in spices
Once the lentils are cooked, stir in cumin seeds, red chili powder, and garam masala. Let it simmer for an additional 5 minutes to allow the flavors to meld.

Combine with lentils
Pour the tempering over the cooked lentils and stir well to combine. Cook for an additional 2 minutes.

Garnish
Remove from heat and garnish with chopped fresh coriander leaves.
