Lentils

Spices and Seasoning

Method

Cooking the Lentils

  1. 1

    Rinse and soak the lentils

Rinse the yellow lentils under cold water until the water runs clear. Soak them in enough water for about 30 minutes.

  2. 2

    Cook the lentils

In a large pot, combine the soaked lentils and 4 cups of water. Bring to a boil, then reduce the heat to a simmer. Add turmeric powder and salt. Cover and cook for about 20-25 minutes or until the lentils are soft and fully cooked.

Adding Spices

  1. 3

    Mix in spices

Once the lentils are cooked, stir in cumin seeds, red chili powder, and garam masala. Let it simmer for an additional 5 minutes to allow the flavors to meld.

Tempering

  1. 4

    Prepare the tempering

In a small pan, heat ghee or oil over medium heat. Add mustard seeds and let them crackle.

  2. 5

    Add aromatics

Add minced garlic, grated ginger, and slit green chilies to the pan. Sauté for 1-2 minutes until fragrant.

  3. 6

    Combine with lentils

Pour the tempering over the cooked lentils and stir well to combine. Cook for an additional 2 minutes.

  4. 7

    Garnish

Remove from heat and garnish with chopped fresh coriander leaves.
