Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter, then dust with cocoa powder.

  2. 2

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, stirring continuously to prevent the eggs from cooking. Add in the vanilla extract, flour, and a pinch of salt, mixing until just combined.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  6. 6

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  7. 7

    Rest and Serve

Remove from the oven and let the cakes rest for 1 minute. Carefully invert each ramekin onto a plate and serve immediately with vanilla ice cream and a dusting of powdered sugar, if desired.
