Preparation

  1. 1

    Slice the Ciabatta

Using a serrated knife, slice the ciabatta loaf in half horizontally to create a top and bottom part for the sandwich.

  2. 2

    Prepare the Tomatoes

Wash the tomatoes thoroughly. Slice each tomato into about 1/4 inch thick rounds.

  3. 3

    Slice the Mozzarella

Cut the fresh mozzarella cheese into slices of similar thickness as the tomatoes.

Assembly

  1. 4

    Spread the Pesto

On the bottom half of the ciabatta, spread the Georgia's pesto evenly using a spatula.

  2. 5

    Layer the Ingredients

Place a layer of sliced mozzarella cheese over the pesto, followed by a layer of tomato slices. Add fresh basil leaves on top.

  3. 6

    Season the Sandwich

Drizzle olive oil and balsamic vinegar over the tomato and basil layer. Season with salt and black pepper to taste.

Finishing Touch

  1. 7

    Close and Cut

Place the top half of the ciabatta on the sandwich. Press down gently to help the ingredients adhere. Cut the sandwich into individual servings.

  2. 8

    Serve

Serve immediately while the sandwich is fresh, or wrap it up for a picnic or lunch on the go.
