Calamari

Method

Preparing the Marinara Sauce

  1. 1

    Cook the Garlic

In a saucepan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.

  2. 2

    Add Tomatoes and Seasonings

Stir in the canned crushed tomatoes, dried oregano, red pepper flakes, salt, and black pepper. Bring to a simmer.

  3. 3

    Simmer the Sauce

Reduce the heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally. Add fresh basil just before serving.

Preparing the Calamari

  1. 4

    Prepare the Dredging Mixture

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

  2. 5

    Prepare the Wet Mixture

In another bowl, whisk together the eggs and milk until well combined.

  3. 6

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 7

    Dredge the Squid Rings

Dip each squid ring first in the wet mixture, then coat it with the dredging mixture. Shake off any excess flour.

  5. 8

    Fry the Calamari

Carefully add the coated squid rings to the hot oil in batches, frying until golden brown, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.

  6. 9

    Serve

Serve the fried calamari hot with the marinara sauce on the side for dipping.
