Tea Selection

Method

Brew Individual Teas (single-cup method)

Prepare water

Bring fresh cold water to the appropriate temperature for the tea you will brew: 95–100°C (203–212°F) for Earl Grey (black tea); 75–80°C (167–176°F) for Grand Jasmin (green tea); 95–100°C (203–212°F) for chamomile and mint if using dried herbs. If you plan to brew more than one tea at once, use the temperature required by the most delicate tea (use lower temperature for green jasmine).

Measure tea

Place 1 tsp of the selected tea in a teapot or infuser sized for one cup (8 oz). Use separate infusers if you want to taste each tea individually. Alternatively, combine small amounts (see blending directions below) if you intend to create a mix.

Steep

Pour 8 oz (about 240 ml) of the prepared water over the tea. Steep times: Earl Grey (black): 3–4 minutes; Grand Jasmin (green): 2–3 minutes; Chamomile flowers: 5–7 minutes; Mint leaf: 5–7 minutes. Do not oversteep delicate green jasmine or it will become bitter.

Remove leaves

When steep time is complete, remove the infuser or strain the leaves to stop extraction.

Finish and taste

Taste the tea. Add honey or sugar (about 1 tsp) if desired, or a lemon slice for black tea. Serve immediately in a warmed cup.

Blended Tea Option (Earl Grey + Jasmine or Chamomile + Mint)

If you want to create a blend, combine measured amounts in an infuser or teapot before adding water. Use these suggested proportions per 8 oz cup: For a floral bergamot-green balance: 1/2 tsp Earl Grey + 1/2 tsp Grand Jasmin. For a calming mint-chamomile infusion: 1/2 tsp Chamomile + 1/2 tsp Mint (increase chamomile to 3/4 tsp if you prefer a stronger chamomile character).

Heat water to the temperature required by the most delicate tea in the blend (for Earl Grey + Grand Jasmin use 75–80°C / 167–176°F; for Chamomile + Mint use 95–100°C / 203–212°F). Pour 8 oz water over the blended leaves and steep: blended Earl Grey + Grand Jasmin: 2–3 minutes; blended Chamomile + Mint: 5 minutes.

Strain leaves and taste. Add sweetener or lemon as desired. Serve.

Iced Tea Variation

Make a double-strength infusion (use 2 tsp total tea for 8 oz of finished concentrate). Steep using the same temperature and time rules above but reduce steep time by about 30 seconds for green blends to avoid bitterness. Once brewed, allow to cool 5–10 minutes, then pour over a full glass of ice (about 1 cup ice) or chill in the refrigerator and serve over ice with mint sprig or lemon.

Adjust quantities to taste. Use fresh water and pre-warm cups for best aroma. Keep each tea's recommended water temperature and steep time in mind to preserve delicate flavors—green jasmine is the most sensitive. For shared tastings, brew each tea separately and serve in small cups so guests can compare.
