Prepare glass

Chill a large rocks or hurricane glass by filling it with ice and setting it aside while you mix the cocktail (about 2–3 minutes).

Combine base

In a cocktail shaker, add white rum, coconut cream, pineapple juice, lime juice, and simple syrup. Add the chilled crushed ice to the shaker.

Shake

Secure the shaker and shake vigorously for 12–15 seconds. You want the mixture well chilled and slightly frothy from the crushed ice and coconut cream.

Strain into glass

Discard the ice from the chilled glass. Double-strain the shaken mixture into the glass over fresh crushed ice, leaving room at the top for the rum float.

Add float

Using the back of a bar spoon held just above the drink surface, slowly pour the aged/dark rum so it floats as a dark, lusty top layer. This creates a layered, renewing effect.

Bitters accent

Carefully drop two dashes of angostura bitters onto the surface of the drink; they will create aromatic pockets and slight visual marbling.

Garnish & Finish

Skewer the pineapple wedge and maraschino cherry on a pick and place across the rim of the glass.

Sprinkle the toasted coconut flakes over the top of the drink and grate a little fresh nutmeg if using for an aromatic finish.

Serve immediately with a straw and small spoon so the guest can stir to meld layers, allowing the dark rum float to slowly integrate into the piña colada base.
