Prep
If using frozen blueberries, measure them frozen — no need to thaw. Measure out sugar, honey/maple, lemon juice, and water. In a small bowl, whisk cornstarch into 1 tsp cold water to make a smooth slurry; set aside.

Cook
Place a medium saucepan over medium heat. Add the blueberries, 1 tablespoon granulated sugar, 1 tablespoon honey or maple syrup, 1 tablespoon water, and a pinch of salt. Stir to combine.

Simmer and Break Down
Bring the mixture to a gentle simmer. Cook, stirring occasionally, for 5–8 minutes. The berries will soften and release juices; use the back of a spoon or a potato masher to gently crush some of the berries for a mix of whole berries and saucy bits.

Thicken
Stir the cornstarch slurry briefly to recombine, then pour into the simmering blueberries. Continue to simmer 1–2 minutes until the compote thickens slightly and becomes glossy. If it becomes too thick, stir in up to 1 more tablespoon of water to reach desired consistency.

Finish
Remove from heat. Stir in 1 tablespoon fresh lemon juice and 1/2 teaspoon vanilla extract (if using). Taste and adjust sweetness with up to 1 additional tablespoon honey or sugar if needed. Let cool slightly; compote will thicken more as it cools. You can chill fully in the refrigerator for up to 5 days in a sealed container.

Assemble
Spoon yogurt into serving bowls or cups (about 1/2 cup yogurt per serving). Top each with 3/4 cup blueberry compote. Sprinkle with 2 tablespoons toasted oats or granola and 1 tablespoon toasted nuts per serving if desired. Garnish with a mint leaf.

Serve immediately for warm compote over cool yogurt, or chill both components and serve cold. Store leftover compote in the refrigerator for up to 5 days; mix into yogurt within 3–4 days for best texture.
