Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and place on paper towels to drain excess fat.

Sauté the Onion
In the same skillet, drain excess bacon grease, leaving about 1 tablespoon. Add the sliced onion and sauté over medium heat until they are golden brown and caramelized, about 8-10 minutes. Remove from heat and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until it forms a paste (roux). Gradually whisk in the milk until smooth. Continue cooking, stirring frequently, until the sauce thickens, about 5 minutes. Stir in the cheddar cheese, salt, black pepper, garlic powder, and optional hot sauce until the cheese is melted and the sauce is creamy.
