Pretzel Fries

Method

Pretzel Fries

  1. 1

    Prepare the Dough

In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

  2. 2

    Mix in Dry Ingredients

Add the all-purpose flour and salt to the yeast mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour, or until it doubles in size.

  5. 5

    Shape the Fries

Once risen, punch down the dough and roll it out into a rectangle. Cut into long strips resembling fries.

  6. 6

    Boil the Fries

In a large pot, bring water to a boil and add baking soda. Boil the pretzel fries for 30 seconds, then remove with a slotted spoon.

  7. 7

    Bake the Fries

Place the boiled fries on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt. Bake in a preheated oven at 425°F (220°C) for about 15-20 minutes until golden brown.

Cheese Sauce

  1. 8

    Make the Roux

In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until light golden.

  2. 9

    Add Milk

Slowly whisk in the milk and continue to cook, stirring constantly, until the mixture thickens.

  3. 10

    Melt the Cheese

Lower the heat and add the shredded cheddar cheese and cubed cream cheese. Stir until fully melted and smooth.

  4. 11

    Season the Sauce

Add garlic powder, salt, and black pepper. Stir to combine and remove from heat.
