Burger Patties

Prepare the Patties
In a large bowl, combine ground beef, salt, black pepper, and garlic powder. Mix gently until just combined, being careful not to overwork the meat.

Shape the Patties
Divide the mixture into 4 equal portions and shape them into patties, slightly larger than the burger buns.
Charred Scallion Aioli

Char the Scallions
On a grill or grill pan over high heat, char the scallions until they are softened and have grill marks, about 2-3 minutes per side. Remove from heat and let cool.

Make the Aioli
In a blender or food processor, combine the charred scallions, mayonnaise, garlic, lemon juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste and refrigerate until ready to use.
Sweet Onion Jam

Cook the Onions
Slice the sweet onions thinly. In a large skillet over medium heat, add the sliced onions and cook until they are soft and translucent, about 10 minutes.

Make the Jam
Add brown sugar, balsamic vinegar, and salt to the skillet with the cooked onions. Stir well and reduce the heat to low. Simmer for 20-25 minutes, stirring occasionally, until thickened. Remove from heat and let cool.
