Peel and chop the carrots, potatoes, and onions into bite-sized pieces. Mince the garlic cloves.

Pat the beef chuck roast dry with paper towels. Season generously with salt and black pepper on all sides.

In a large Dutch oven or heavy pot, heat a tablespoon of oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.
