    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

    Prepare the Slaw

    In a bowl, combine the spicy slaw mix with a tablespoon of Thousand Island dressing. Mix well and set aside.

Assembly

    Layer the Ingredients

    On a slice of sourdough bread, layer a slice of Swiss cheese, corned beef, spicy slaw, bacon, and a slice of Gouda cheese. Repeat with another slice of bread.

    Spread Thousand Island

    Spread a tablespoon of Thousand Island dressing on the outer sides of the assembled sandwiches.

Grilling

    Grill the Sandwiches

    Heat a skillet or griddle over medium-low heat. Place the sandwiches in the skillet, cooking for about 4-5 minutes per side, or until the bread is golden brown and the cheese has melted.

    Add Crispy Onions

    In the last minute of grilling, sprinkle crispy fried onions on top of the sandwiches and press down gently.

Serving

    Serve the Sandwiches

    Remove from the skillet, slice in half if desired, and serve immediately with extra Thousand Island dressing on the side.
