    Gather all ingredients and prepare vegetables by dicing the onion, bell pepper, and tomatoes. Mince the garlic and set aside.

    Slice the andouille sausage and dice the chicken breast into bite-sized pieces.

Cooking

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion and bell pepper, cooking until they are soft, about 5 minutes.

    Stir in the minced garlic and sliced andouille sausage, cooking for an additional 2-3 minutes until the sausage is browned.
