Method

Preparation

  1. 1

    Slice the Ribeye

Thinly slice the ribeye steak against the grain into 1/4 inch slices. Season with salt and pepper.

  2. 2

    Caramelize the Onion

In a skillet, heat olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, for about 15-20 minutes or until the onions are golden brown and caramelized.

Cooking

  1. 3

    Cook the Ribeye

In the same skillet with the caramelized onions, add the sliced ribeye. Cook for 3-5 minutes until the meat is browned and cooked to your desired level of doneness.

  2. 4

    Prepare the Au Jus

In a separate pot, heat the beef broth over medium heat until warm. Season with salt and pepper to taste.

Assembly

  1. 5

    Assemble the Sandwich

Slice the artisan sub rolls in half. Layer the bottom half with the cooked ribeye and caramelized onions. Top with Swiss cheese slices.

  2. 6

    Melt the Cheese

Place the assembled sandwiches under a broiler for 2-3 minutes or until the cheese is melted and bubbly.

  3. 7

    Serve

Serve the sandwiches hot with a side of warm au jus for dipping.
