Slice the Ribeye
Thinly slice the ribeye steak against the grain into 1/4 inch slices. Season with salt and pepper.

Prepare the Au Jus
In a separate pot, heat the beef broth over medium heat until warm. Season with salt and pepper to taste.

Assemble the Sandwich
Slice the artisan sub rolls in half. Layer the bottom half with the cooked ribeye and caramelized onions. Top with Swiss cheese slices.

Place the assembled sandwiches under a broiler for 2-3 minutes or until the cheese is melted and bubbly.
