    Form and cook sausage patty

    Divide the 0.5 lb bulk Italian sausage into one patty (about 3–4 oz). Shape into a patty roughly the diameter of the roll (flatten slightly). Heat a nonstick or cast-iron skillet over medium heat and add 1 tsp olive oil. When oil shimmers, add the patty and cook 3–4 minutes per side until well browned and internal temperature reaches 160°F (71°C). Reduce heat if browning too quickly. Remove patty to a plate and tent with foil to keep warm.

    Cook the egg

    Wipe skillet lightly if needed and add 1 tsp butter, lowering heat to medium-low. Crack the egg into a small bowl, season with about 1/8 tsp salt and 1/8 tsp black pepper. Gently slide egg into the skillet and cook to preference: for a set-but-still-tender yolk cook 2–3 minutes covered; for fully set yolk cook about 4 minutes covered. Optionally fold or slide the egg onto the cooked sausage patty after cooking.

    Warm roasted peppers

    In the same skillet over low heat, add the sliced roasted red peppers (0.25 cup) and warm for 30–60 seconds just to heat and deglaze any browned bits. If using red pepper flakes, sprinkle 1/8 tsp into the peppers while warming. Stir in chopped basil or parsley (1 tbsp) if using. Remove peppers from skillet.

    Toast and assemble roll

    Slice the roll in half lengthwise. Brush cut sides very lightly with butter or olive oil (use remaining butter or oil). Return skillet to medium heat and place the roll cut-side down to toast until golden, about 1–2 minutes. Place the cooked sausage patty on the bottom half of the roll, top with the cooked egg, then add the warmed roasted red pepper strips. Lay 2 slices of provolone over the toppings. If you prefer the cheese melted, return the assembled bottom half to the skillet and cover with a lid for 30–60 seconds or place briefly under a broiler until cheese softens and melts. Close sandwich with the top roll half.

    Finish and serve

    Press the sandwich gently for a few seconds, slice in half if desired, and serve immediately. Adjust seasoning with extra salt, pepper, or hot sauce to taste.
