Sweet Potato Fries

    Preheat and prepare

    Preheat the oven to 425°F (220°C). Line two large baking sheets with parchment paper or lightly grease them. This helps fries crisp without sticking.

    Cut the potatoes

    Scrub and dry the sweet potatoes. Trim the ends, then cut each potato lengthwise into 1/4- to 1/2-inch thick planks, then into sticks so they are roughly uniform in thickness (about 1/4–1/2 inch wide). Aim for even pieces so they cook uniformly.

    Soak (optional for extra crispness)

    Place the cut fries in a large bowl of cold water and soak for 20–30 minutes to remove surface starch. If short on time, you can skip soaking, but soaking improves crispness.

    Dry thoroughly

    Drain the fries and spread them on a clean kitchen towel or paper towels. Pat completely dry — moisture prevents browning and crisping.

    Coat fries

    In a large bowl, toss the dried fries with cornstarch until lightly and evenly dusted. Add olive oil, smoked paprika, ground cumin, garlic powder, kosher salt, black pepper, and cayenne (if using). Toss well so each fry is evenly coated in oil and seasoning.

    Arrange on baking sheets

    Spread the fries in a single layer on the prepared baking sheets with space between pieces. Avoid crowding — use two sheets if needed. Overlapping causes steaming instead of crisping.

    Bake and flip

    Bake in the preheated oven for 15 minutes. Remove the trays, flip each fry so the other side can brown, rotate the pans between racks if necessary, and return to the oven. Bake another 10–15 minutes until edges are browned and fries are crisp to your liking (total 25–30 minutes). Thicker fries may need a couple minutes more.

    Finish and rest

    When fries are done, remove from oven and immediately sprinkle a little extra salt to taste. Let them rest on the baking sheet for 2–3 minutes to firm up before serving.

    While fries bake, combine the Greek yogurt or mayonnaise, maple syrup, lime juice, hot sauce (if using), and salt in a small bowl. Whisk until smooth and taste-adjust seasoning. Chill until ready to serve. Serve alongside hot sweet potato fries.
