Rinse all berries, grapes, and other whole fruits under cold running water. Drain in a colander and gently pat dry with paper towels or a clean kitchen towel.

Remove the green tops from the strawberries and slice large berries in half or quarters so pieces are roughly bite-sized (aim for about 1-inch pieces).

prepare blueberries and grapes
Remove any stems from blueberries and grapes. Halve larger grapes if desired for easier eating.

prepare pineapple
Trim the top and bottom of the pineapple, stand it upright and slice away the skin in strips, then remove the core and dice the flesh into bite-sized cubes (about 1-inch).

Peel the kiwi and slice into rounds or half-moons. Peel the mango, slice the cheeks away from the pit, then dice the flesh into cubes similar in size to the pineapple.

Using a sharp knife, cut away the orange peel and pith, then work between the membranes to release segments (supremes). Alternatively, peel and cut into bite-sized pieces.

Place all prepped fruit into a large bowl. Gently fold together with a large spoon or spatula to mix without mashing the softer fruits.

In a small bowl, whisk together fresh lime juice, honey (or maple syrup), finely grated lime zest, chopped mint, and a pinch of sea salt until combined and slightly emulsified.

Drizzle the dressing over the mixed fruit. Gently toss once or twice to coat fruit evenly. Taste and adjust sweetness or acidity by adding a little more honey or lime juice if desired.

Cover and chill the assembled fruit salad for at least 15 minutes to let flavors meld (up to 2 hours). Serve chilled. Optionally garnish with a few whole mint leaves.
