Chilaquiles

Method

Preparation

1

Prepare the Tortillas

Cut the corn tortillas into quarters. Heat the olive oil in a large skillet over medium heat. Add the tortilla pieces and fry until they are crispy and golden brown. Remove from the skillet and drain on paper towels.

2

Prepare the Sauce

In the same skillet, pour in the red enchilada sauce and warm it over medium heat. Add the fried tortilla pieces and toss gently to coat with the sauce.

3

Add Chicken and Cheese

Stir in the shredded chicken and half of the crumbled cheese into the skillet. Cook for an additional 2-3 minutes until heated through.

4

Serve

Transfer the chilaquiles to a serving plate. Top with the remaining cheese, sliced avocado, and fresh cilantro. Season with salt and black pepper to taste.
