Calamari Preparation

Prepare the Buttermilk Mixture
In a bowl, pour the buttermilk and set aside.

Coat the Calamari
In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Dip each calamari ring into the buttermilk, then coat with the flour mixture. Ensure they are well-coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari rings in batches for about 2-3 minutes or until they are golden brown and crispy. Remove them using a slotted spoon and place them on paper towels to drain excess oil.

Sauté Garlic
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic cloves and sauté for about 1-2 minutes until fragrant.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes and add the dried oregano, basil, salt, black pepper, and red pepper flakes. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally until it thickens slightly.
