Preheat the Oven

Preheat your oven to 200°C (390°F) and prepare four ramekins by greasing them with butter and dusting with cocoa powder.

Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt together over a double boiler or in the microwave in 30-second intervals until smooth. Stir and set aside to cool slightly.

Mix the Batter

In a mixing bowl, whisk together the granulated sugar and eggs until pale and frothy. Add the melted chocolate and butter mixture, then stir in the vanilla extract and a pinch of salt. Gradually fold in the all-purpose flour until just combined.

Baking

Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake

Place the ramekins on a baking tray and bake in the preheated oven for about 10-12 minutes, or until the edges are firm but the center is still soft.

Serving

Serve

Allow the fondants to cool for 1 minute. Carefully run a knife around the edges and invert onto a plate. Serve immediately with a scoop of vanilla ice cream on the side and garnish with fresh raspberries if desired.
