Method

Preparing the Batter

    Melt Butter and Chocolate

    In a medium saucepan, melt 1 cup of unsalted butter and 8 oz of semisweet chocolate over low heat, stirring continuously until smooth. Remove from heat and let cool slightly.

    Mix in Sugar and Eggs

    To the melted chocolate mixture, add 1 cup of granulated sugar and mix until well combined. Then, whisk in 2 large eggs and 2 large egg yolks, followed by 1 tsp of vanilla extract, mixing until smooth.

    Add Dry Ingredients

    Sift in 1 tbsp of all-purpose flour and add a pinch of salt to the mixture. Gently fold until just combined, being careful not to overmix.

Baking the Cakes

    Prepare Ramekins

    Preheat the oven to 425°F (220°C). Grease four 6 oz ramekins with butter and dust with flour to prevent sticking.

    Fill Ramekins

    Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still slightly soft.

    Cool and Serve

    Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, tapping gently to release the cake. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
