In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

In a separate bowl, mix the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Remove the chicken from the marinade and let excess liquid drip off. Dredge each piece in the seasoned flour mixture, ensuring an even coating. Shake off any excess flour.

Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken pieces in batches for about 10-12 minutes or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

In a separate small saucepan, heat a 1/2 cup of the frying oil over medium heat. Add 1 tablespoon of cayenne pepper and stir to combine.
