Make the Shrub Syrup
Macerate Fruit
Place the 2 cups chopped seasonal fruit into a medium nonreactive bowl or jar. Add 1 cup granulated sugar, the sliced ginger, lemon zest, whole spice if using, and a pinch of salt. Stir to coat the fruit fully in sugar. Cover and let macerate at room temperature for 1–2 hours until the fruit releases juice. For stronger flavor, refrigerate and macerate up to 24 hours.
Make Simple Syrup Base
In a small saucepan, combine 1 cup water and the macerated fruit with its juices (strain out large solids if needed) and bring gently to a simmer over medium-low heat. Stir until any remaining sugar dissolves, then simmer for 3–5 minutes to meld flavors. Do not vigorously boil — you only want to dissolve sugar and lift flavor.
Add Vinegar and Steep
Remove the pan from heat. Stir in 1 cup apple cider vinegar. Allow the mixture to cool to room temperature, then transfer to a clean jar. Let the shrub steep for at least 2 hours in the refrigerator (preferably 12–48 hours) to develop balance between fruit, sugar, and vinegar.
Strain and Adjust
After steeping, strain the shrub through a fine-mesh sieve or cheesecloth into a clean container, pressing gently on solids to extract liquid but not harsher tannins. Taste and adjust: if too sharp, add up to 2 tablespoons simple syrup (equal parts sugar warmed with water) or a little more sugar; if too sweet, add up to 1–2 tablespoons more vinegar. Chill before using. The finished shrub syrup will keep refrigerated for 2–4 weeks.
Assemble the Scrappy Shrub (Non‑Alcoholic)
Fill a highball or Collins glass with 1 cup of ice.
Pour 2 tablespoons shrub syrup over the ice.
Top with 6 oz chilled soda water. Gently stir once or twice to combine without flattening the bubbles.
Garnish with a citrus wedge and a sprig of fresh herb. Serve immediately.
