Steak Preparation

Season the Steak

Sprinkle salt and black pepper evenly over the ribeye steak on both sides. Allow it to sit at room temperature for about 20 minutes.

Sear the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare, or longer depending on desired doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for about 10 minutes before slicing it thinly against the grain.

Prepare the Bread

Toast the sourdough bread slices lightly if desired.

Assemble the Sandwich

Spread mayonnaise on one slice of bread and mustard on the other. Layer the lettuce, sliced tomato, and the sliced ribeye steak on top of the mayonnaise. Add the cheddar cheese slice on top of the steak.

Complete the Sandwich

Place the other slice of bread on top, pressing down gently. Cut the sandwich in half diagonally and serve immediately.
