Preparation
Prepare the Steak
Take the rib-eye steaks out of the refrigerator and allow them to sit at room temperature for about 30 minutes prior to cooking. This helps in cooking evenly.
Season the Steaks
Pat the steaks dry with paper towels. Generously season both sides with kosher salt, freshly ground black pepper, and garlic powder.
Cooking
Heat the Pan
In a large cast-iron skillet or heavy frying pan, heat the olive oil over high heat until it shimmers but does not smoke.
Sear the Steaks
Carefully place the seasoned rib-eye steaks in the hot pan. Avoid overcrowding. Sear for 4-5 minutes without moving them to develop a nice crust.
