Marinate the Chops

In a mixing bowl, combine honey, soy sauce, and mustard to form the marinade. Place the pork chops in a resealable plastic bag or a shallow dish and pour the marinade over the chops. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight.

Prep the Garlic and Herbs

While the chops are marinating, finely mince the garlic and chop the fresh rosemary. Set aside.

Preheat the Grill

Preheat your grill to medium-high heat. If using vintage Blacklock irons, ensure they are properly heated.

Prepare the Chops

Remove the pork chops from the marinade and pat them dry with paper towels. Brush both sides with olive oil and season generously with salt, black pepper, garlic, and rosemary.

Grill the Chops

Place the pork chops on the grill. Cook for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C) and they're beautifully pink in the center.

Add Lemon Flavor

In the last minute of cooking, brush the pork chops with lemon juice and sprinkle lemon zest for added flavor.

Rest and Serve

Remove the chops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute and enhances the flavor.
