Line a 12-cup mini muffin tin with liners and set aside.
Make chocolate shells

Melt chocolate and oil
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second bursts, stirring between each until smooth and glossy.

Spoon about 1 tablespoon of melted chocolate into each liner and tilt to coat the bottom. Add a little up the sides if desired. Chill for 5–7 minutes to firm.
Prepare peanut butter filling

Mix filling
In a small bowl, whisk together peanut butter, powdered sugar, vanilla extract, and salt until smooth. If the mixture is too thick, whisk in a teaspoon of water or milk until spreadable.
Assemble cups

Add filling
Place a small spoonful of peanut butter filling into each chocolate shell, flattening slightly but leaving a bit of space around the edges.

Pour or scoop remaining melted chocolate over the filling to fully cover the center. Tap gently to settle and remove air bubbles.

Chill and finish
