Prepare cream cheese spread
In a small mixing bowl, combine the cream cheese and milk. Mash and whisk until smooth and spreadable. Season with 1/4 tsp salt and 1/2 tsp black pepper (reserve remaining pepper for finishing). If the cream cheese is very soft, reduce milk to 1 tablespoon; if very firm, add up to 1 additional tablespoon.

Warm raspberries and jam (optional)
Place fresh raspberries and raspberry jam in a small microwave-safe bowl or small saucepan. Gently heat for 20–30 seconds in the microwave or over low heat just until the raspberries soften and release juices and the jam becomes runny, stirring once. This creates a cohesive sweet-tart layer that spreads easily. Let cool for 1–2 minutes.

Assemble sandwiches
Lay out 4 slices of bread. On two slices, evenly spread the cream cheese mixture to the edges. On the other two slices, spread the warmed raspberry mixture (dividing evenly). If you prefer a less-sweet bite, use raspberry mixture on only one side of each sandwich and leave the other side plain cream cheese. Top the cream cheese–covered slices with 4 slices of turkey ham each (2 slices per sandwich if making two sandwiches) arranging to cover the surface. Distribute optional baby spinach or arugula evenly over the turkey if using. Close each sandwich with a raspberry-spread slice on top.

Butter and toast
Spread softened butter evenly on the outside faces of both top and bottom slices of each assembled sandwich. Heat a skillet or griddle over medium heat. When hot, place sandwiches buttered-side down and cook 3–4 minutes until golden brown, then flip and cook another 2–3 minutes until the second side is golden and the filling is warmed through. Press gently with a spatula while cooking for a uniform crust. If the bread browns too quickly before filling warms, lower the heat to medium-low and cover the pan for 1–2 minutes to allow interior warming.

Finish and serve
Remove sandwiches from the pan and let rest 1 minute. Slice each sandwich in half diagonally. Sprinkle remaining 1/2 tsp black pepper lightly over the cut sandwiches if desired. Serve immediately while warm so the cream cheese is soft and the raspberry layer is slightly melted into the turkey.
