Eggs

Method

Eggs

  1. 1

    Beat eggs

Crack the 6 eggs into a medium bowl. Add 3 tablespoons whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until completely combined and slightly frothy (about 30 seconds).

  2. 2

    Preheat pan

Place a 10-inch nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. The butter should foam but not brown.

  3. 3

    Cook scrambled eggs

Pour the beaten eggs into the warm pan. Let them sit undisturbed for 10–15 seconds until edges just begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center in slow folding motions; repeat every 10–15 seconds. For soft, creamy eggs cook about 2–3 minutes; for firmer eggs cook 3–4 minutes. Remove pan from heat just before desired doneness—the residual heat will finish them. If you prefer your eggs 'cooked your way' (softer, firmer, or scrambled more set), adjust cooking time accordingly.

  4. 4

    Finish and keep warm

If needed, add a small pat (about 1 teaspoon) of butter and gently fold it in for extra silkiness. Transfer scrambled eggs to a warm plate and keep warm while you finish bacon and toast.

Bacon

  1. 5

    Preheat oven or skillet

Two options: Oven (recommended for even cooking) — preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Skillet — use a large cold skillet over medium heat.

  2. 6

    Oven-baked method

Lay 8 bacon slices in a single layer on the wire rack. Bake 12–18 minutes depending on thickness and desired crispness (thin bacon 12–14 min, thick 16–18 min). Flip once halfway only if not using a rack. Remove and drain on paper towels.

  3. 7

    Skillet method

If using a skillet, add 1 teaspoon neutral oil or a splash of water to the cold pan to prevent sticking. Arrange bacon in a single layer and cook over medium heat, turning occasionally, about 8–12 minutes until browned and crisp to your preference. Transfer to paper towels to drain.

  4. 8

    Keep warm

Place cooked bacon on a sheet pan in a single layer in a warm oven (around 200°F / 95°C) if not serving immediately so it stays crisp.

Toast

  1. 9

    Toast bread

Toast 4 slices of bread in a toaster or under a broiler until golden and crisp at the edges (about 2–3 minutes in a toaster, 1–2 minutes per side under broiler—watch closely).

  2. 10

    Butter toast

Spread 2 tablespoons unsalted butter evenly over the hot toast so it melts in. If you like, return briefly to the oven or toaster oven (30 seconds) to warm through and slightly brown the buttered surface.

To Serve

  1. 11

Arrange plated components: divide scrambled eggs, bacon, and buttered toast between 2 plates (serves 2). Sprinkle chopped chives or parsley over the eggs (about 1 tablespoon total). Serve with hot sauce or ketchup on the side. Serve immediately so eggs remain warm and toast stays crisp.
