    Prep bread

    Preheat a skillet over medium heat. Brush both sides of each multigrain slice lightly with olive oil (about 1/2 tbs per side total). Toast bread in the skillet 2–3 minutes per side, or until golden and crisp. Alternatively, use a toaster or broiler to achieve even toasting.

    Grate manchego

    While bread toasts, finely grate the Manchego and set aside in a small bowl. Reserve a pinch for finishing.

    Warm honey

    Place rosemary honey in a small microwave-safe bowl and warm 8–10 seconds or set bowl in a warm spot; it should be pourable but not hot. Lightly smash one rosemary sprig into the honey for 30 seconds to infuse, then remove the sprig.

Ricotta Scrambled Eggs

    Whisk eggs and dairy

    Crack the eggs into a medium bowl. Add the whole milk, ricotta, half (1/2) tsp salt, and 1/4 tsp black pepper. Whisk gently until combined but still slightly streaky — you want some ricotta texture to remain so the eggs are creamy.

    Cook eggs low and slow

    Heat a nonstick skillet over low–medium-low heat and add the butter. When the butter is melted and foamy but not browned, pour in the egg mixture. Let sit undisturbed for 10–15 seconds until edges begin to set.

    Scramble gently

    Using a rubber spatula, gently push the set edges toward the center, tilting the pan to let uncooked egg flow out. Continue folding every 10–15 seconds; keep the heat low so the curds stay soft and creamy. Total cook time should be 3–5 minutes, depending on pan and heat. Remove from heat when eggs are still slightly glossy — they will finish setting off the heat.

    Season and finish

    Taste and add remaining salt and pepper if needed. Fold in the sliced chives and half the grated Manchego (reserve the rest for topping).

Assembly & Garnish

    Divide the toasted multigrain slices across four plates (or two slices per person). Spoon equal portions of the ricotta scrambled eggs onto each toast, mounding slightly in the center.

    Sprinkle the remaining Manchego over the eggs, then lightly dust each portion with crushed red pepper flakes to taste (about 1/4 tsp per slice if you like a hint of heat).

    Drizzle about 1/2 tbs rosemary honey over each plated toast (adjust to taste). Zest a little lemon over the top if using, and tuck a small piece of fresh rosemary or a lightly bruised sprig on each plate for aroma.

    Serve immediately while eggs are warm and toast is crisp.
