Prepare rosemary butter
In a small bowl, combine the softened unsalted butter, finely chopped fresh rosemary, minced garlic, sea salt, and freshly ground black pepper. Mix until evenly distributed.

Prepare cream cheese layer
In a separate bowl, soften the cream cheese if necessary and stir it until smooth. If you prefer a thinner spread, whisk in 1–2 teaspoons of warm water or milk to loosen to a spreadable consistency.

Butter bread
Spread about 1/2 tablespoon of the rosemary butter on one side of each bread slice. This will be the outside surface that contacts the pan. On the opposite (unbuttered) side of four slices, spread about 1 tablespoon of the softened cream cheese evenly to the edges.

Assemble sandwiches
Divide shredded mozzarella evenly among the four cream-cheese–topped slices, sprinkling it in an even layer. If using, sprinkle the grated Parmesan and a pinch of chili flakes over the mozzarella. Top each with the remaining bread slice, buttered side facing up, to form 4 sandwiches.

Grill sandwiches
Place 2 sandwiches in the skillet (do not overcrowd). Press gently with a spatula. Cook for 3–4 minutes until the bottom is golden brown and crisp. Flip carefully and cook the second side another 3–4 minutes, pressing occasionally, until golden brown and the mozzarella is fully melted. If the cheese needs more time to melt before the bread browns further, reduce heat to low and cover the pan with a lid for 1–2 minutes to trap heat.

Finish remaining sandwiches
Repeat with the remaining 2 sandwiches, wiping the pan if necessary and adding a touch more oil or lowering heat to prevent over-browning.
To Serve

Transfer sandwiches to a cutting board and let rest 1 minute. Cut each sandwich in half on the diagonal and serve immediately while still warm and gooey. Optionally garnish with a small sprig of fresh rosemary.
