Cook mix-ins (if using vegetables or meats)

Place a non-stick skillet over medium heat and add 1 tsp neutral oil. When shimmering, add onions and bell peppers (if selected). Sauté for 2–3 minutes until softened and translucent.

Prepare eggs

In a bowl, crack 3 large eggs. Add 1 tablespoon whole milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds).

Scatter your warmed mix-ins plus any raw tomato and chosen cheeses evenly over one half of the omelette. If using mozzarella, distribute smaller pieces so it melts evenly.

Let the omelette cook another 20–30 seconds to allow cheese to soften and fillings to warm. If desired, briefly cover the pan for 15–20 seconds to help cheese melt.

Run the spatula around the edge to release the omelette, then fold the empty half over the filled half. Slide the omelette onto a plate seam-side down.
