    Prepare coffee

    Brew a small, strong amount of black coffee or make one shot of espresso and let it cool slightly. If using instant, dissolve 1 teaspoon in 1 tablespoon hot water. You need about 1 tablespoon of concentrated coffee for the oats.

    In a small saucepan, combine 1 cup rolled oats, 1 cup water, 1 cup milk, and a pinch of salt. Stir to combine.

    Bring the mixture to a gentle boil over medium-high heat, then reduce heat to medium-low to maintain a simmer. Cook, stirring frequently to prevent sticking, for about 6–8 minutes until the oats are creamy and most liquid is absorbed. Adjust cooking time depending on desired texture (less for chewier oats, more for very creamy).

    About 1–2 minutes before the oats are done, stir in the prepared 1 tablespoon strong coffee (or espresso), 1 tablespoon brown sugar or maple syrup, 1 teaspoon ground cinnamon, and 1/2 teaspoon vanilla extract (if using). Taste and adjust sweetness or coffee intensity as desired.

    If the oatmeal becomes too thick, stir in up to 2 tablespoons extra milk or water to reach desired creaminess. Remove from heat.

Toppings & Serve

    Divide the hot coffee oatmeal between two bowls (or one large serving bowl).

    Top each bowl with sliced fresh strawberries (about 1–2 pieces per serving depending on size), sprinkle with toasted chopped nuts if using (about 1 tablespoon per bowl), and drizzle a bit of milk or cream (about 1 tablespoon) for extra richness if desired.

    Finish with a light dusting of ground cinnamon (about 1/8–1/4 teaspoon) over each bowl. Taste and adjust — add a little more maple syrup or sugar if you want it sweeter.

    Serve immediately while warm. Leftover oatmeal can be covered and refrigerated for up to 3 days; reheat with a splash of milk and a quick stir.
