Method
Toast base
- 1
Prepare and toast bread
Preheat a skillet over medium heat or set a toaster oven/grill to medium. Lightly brush both sides of each multigrain bread slice with the olive oil (about 1 tsp per side). Sprinkle the 1/4 tsp salt evenly across the slices. Toast in the skillet or toaster oven until golden brown and crisp, about 2–3 minutes per side in a skillet, or 4–6 minutes in a toaster oven. Remove and set on a rack so they stay crisp.
Avocado + cream cheese spread
- 2
Make the spread
In a bowl, scoop the flesh of the ripe avocado and mash lightly with a fork leaving some texture. In a separate small bowl, soften the 4 oz cream cheese by stirring until smooth (or microwave 5–10 seconds if needed). Combine the mashed avocado with the softened cream cheese. Add 1 tsp lemon juice, 1/4 tsp sea salt, and 1/4 tsp black pepper. Mix until homogenous but slightly chunky. Taste and adjust seasoning with more lemon or salt if desired.
- 3
Optional smoother spread
If you prefer a completely smooth spread, use a fork or small food processor to blend the avocado and cream cheese together until creamy. Chill briefly if too warm.
Nutty crunch topping
- 4
Toast and caramelize nuts
Roughly chop the mixed nuts if not already. Heat a small nonstick skillet over medium-low heat and add 1 tsp unsalted butter. Once melted, add the chopped nuts and stir for 1 minute to warm. Drizzle 1 tsp maple syrup or mild honey over the nuts and continue to cook, stirring constantly, for another 1–2 minutes until nuts are fragrant and coated but not burned. Transfer immediately to a plate or sheet of parchment to cool; sprinkle 1/8 tsp sea salt over them while warm so the coating sets.
- 5
Cool and break up
Let the nuts cool completely, then break any large clumps so you have a crunchy, nibble-sized mixture to sprinkle on the toast.
Assembly & garnish
- 6
Spread and top
Spread about 1/4 of the avocado–cream cheese mixture onto each toasted bread slice, using the back of a spoon to create an even layer. Divide the chilled nutty crunch evenly over the four slices, pressing gently so it adheres to the spread.
- 7
Finish
Drizzle 1/2 tsp of runny honey over each toast (total 2 tsp). If using, sprinkle a pinch (about 1/8 tsp) of red pepper flakes across all slices for a touch of heat, then scatter microgreens or fresh herbs over the top for freshness.
- 8
Serve
Serve immediately so the toast remains crisp. Leftovers: keep components separately (spread refrigerated up to 24 hours; nuts at room temperature in an airtight container) and assemble just before serving.
