Sauté aromatics
Heat a medium saucepan over medium heat. Add the neutral oil. When shimmering, add the finely diced onion and a pinch of salt. Sauté, stirring occasionally, until the onion is translucent and beginning to brown at the edges, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds more until fragrant.
Deglaze with whiskey
Carefully add the bourbon or whiskey to the pan to deglaze, scraping any browned bits from the bottom with a wooden spoon. Let the alcohol flame off for about 20–30 seconds if desired, or simmer until the liquid reduces slightly, about 1 minute.
Add base ingredients
Stir in the ketchup and tomato paste until combined. Add the apple cider vinegar, brown sugar, molasses, Worcestershire sauce, and Dijon mustard. Stir thoroughly to dissolve the sugar and incorporate the tomato paste. Bring the mixture to a gentle simmer over medium-low heat.
Season and simmer
Add the smoked paprika, chili powder, ground black pepper, kosher salt, and hot sauce (if using). Reduce heat to low and let the sauce simmer gently, uncovered, stirring occasionally, for 12–18 minutes to allow flavors to meld and the sauce to thicken. If the sauce becomes too thick, whisk in up to 2 tablespoons of water to reach your desired consistency.
Finish and texture
Taste and adjust seasoning: add more salt, sugar, vinegar, or hot sauce as preferred. For a smoother sauce, remove from heat and blend with an immersion blender for 20–30 seconds or transfer carefully to a blender and puree until smooth. If you prefer a glossy finish, return the blended sauce to low heat and whisk in 1 tablespoon of butter until melted and incorporated.
Cool and store
Let the sauce cool to room temperature. Use immediately as a basting sauce during the last 5–10 minutes of grilling or as a condiment. Store leftovers in an airtight container in the refrigerator for up to 2 weeks. Reheat gently before using; if thickened in the fridge, loosen with a splash of water or vinegar.
